"Why did Yankee Doodle name the feather in his hat 'Macaroni'?"
Back in the originating time period of the song (some time in the 1700's), a 'macaroni' (in England) was a dandy (rather foppish man) who took on mannerisms considered Continental. Basically, the man being called a 'macaroni' was one who thought he was stylin' but he was just a fool.
As far as how it relates to Yankee Doodle Dandy, that song was the Brits making fun of the Yankees (although, why they would mock a baseball team is beyond me).

"What did cured ham actually have?"
Curing is a process used to preserve food. So, my guess would be that the ham was cured of the possibility of going bad quickly. :-)
