I always seem to bet on the wrong horse except for the day I unlocked Lucky Stiff! Is it totally random or is there any way I can predict which horse is the most probable winner?

The most probable horse is the one with the shortest odds, at least in theory. So Lightning and Tornado at 7/2 - meaning you get your bet multiplied by the amount that 2 goes into 7, so 3.5. However, they're also the ones that pay you the least money.
