They're used automatically when you search the crime scene. Hair analysis lets you find hair clues if they exist. Handwriting analysis lets you sometimes figure out whether handwriting evidence was written by a left or right handed suspect, but doesn't always work.

Is there any chance that if you have hair and thread analysis you might still miss the existance of evidence, depending on your gear?

Yes. Especially if you are doing harder levels with little or no smart gear.
