Paradise, in the long run it doesn't really matter much. If you want to subscribe and be in a particular agency and they happen to have too many Barbers or not enough Bankers or something, it might matter a little.
As far as solving cases goes, I am pretty sure the physical evidence is spread out evenly over time - though certainly not evenly case by case!
Having said that, for evidence I am happy to have the Tailor, as it is easy to tell who is male/female by name, whereas it is not so easy to remember who is right- or left-handed, slim/heavy, or who has straight or curly hair. So the questioning is more convenient.
As far as the non-evidence contacts go, I would say just go with the luck of the draw, unless you're in an agency where no one has Priest or something. And that doesn't cause too much harm, generally.
