is there a certain limit for quitting cases? So, can you only quit a few cases or every case you want to?

Currently, I stand at 868 quit cases. :) Quitting is much better than guessing which can lead to the retirement of your detective.
(In otherwords, there is no limit.) ;)

Also, if you want to get rid of your false accutions talk to the shady customer. It usually costs about $400.

Shady costs $400 now, but his prices go up substantially as experience increases. There are people with millions of experience points who'd have to pay in excess of $500,000 to Shady to get rid of their FA's. So it is always better to quit than it is to guess.

There is no limit for quitting cases. Quit til the cows come home. ;-)
You have an absolute limit of three false accusations, and then you get retired. You can 'resurrect' yourself, but the price is VERY high, and likd Arabesque said, Shady's fees are steep too (like half a million starting steep for advanced detectives).
All in all, quitting's a better option every time. ;-)
